Aloo Gobi (Potato and Cauliflower)

Ingredients:

  • 2 large potatoes, peeled and cubed
  • 1 small cauliflower, cut into florets
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1 green chili, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp red chili powder
  • 2 tbsp oil
  • Fresh cilantro for garnish
  • Salt to taste

Instructions:

  1. Cook Vegetables: Heat oil in a pan. Add cumin seeds and let them splutter. Add onions and cook until golden.
  2. Add Aromatics: Add ginger-garlic paste and green chili, sauté for a minute.
  3. Tomatoes and Spices: Add chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until tomatoes are soft.
  4. Add Vegetables: Add potatoes and cauliflower to the pan. Mix well with the spices.
  5. Simmer: Cover and cook on low heat for 15-20 minutes, stirring occasionally. Add water if needed.
  6. Finish: Add garam masala, mix well, and cook for another 5 minutes.
  7. Garnish: Garnish with fresh cilantro and serve with roti or rice.
