Aloo Gobi (Potato and Cauliflower)
Ingredients:
- 2 large potatoes, peeled and cubed
- 1 small cauliflower, cut into florets
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 1/2 tsp red chili powder
- 2 tbsp oil
- Fresh cilantro for garnish
- Salt to taste
Instructions:
- Cook Vegetables: Heat oil in a pan. Add cumin seeds and let them splutter. Add onions and cook until golden.
- Add Aromatics: Add ginger-garlic paste and green chili, sauté for a minute.
- Tomatoes and Spices: Add chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until tomatoes are soft.
- Add Vegetables: Add potatoes and cauliflower to the pan. Mix well with the spices.
- Simmer: Cover and cook on low heat for 15-20 minutes, stirring occasionally. Add water if needed.
- Finish: Add garam masala, mix well, and cook for another 5 minutes.
- Garnish: Garnish with fresh cilantro and serve with roti or rice.
