Palak Paneer (Spinach and Cottage Cheese)
Ingredients:
- 200g paneer (cottage cheese), cubed
- 2 cups fresh spinach, washed and chopped
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tbsp ginger-garlic paste
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 2 tbsp oil
- Salt to taste
Instructions:
- Blanch Spinach: Boil water in a pot and add spinach. Cook for 2 minutes, then transfer to ice-cold water. Drain and blend into a smooth puree.
- Cook the Base: Heat oil in a pan, add cumin seeds. When they splutter, add onions and sauté until golden brown.
- Add Aromatics: Add ginger-garlic paste and green chili, sauté for a minute.
- Tomatoes and Spices: Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until tomatoes are soft.
- Combine Spinach: Add the spinach puree to the pan, mix well. Cook for 5 minutes.
- Add Paneer: Add cubed paneer and garam masala. Cook for another 5 minutes, allowing the paneer to absorb the flavors.
- Serve: Serve hot with roti or rice.
