Vegetable Biryani
Ingredients:
- 1 cup basmati rice
- 1 cup mixed vegetables (carrots, beans, peas, potatoes), chopped
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp red chili powder
- 2 tbsp oil
- Fresh cilantro and mint leaves for garnish
- Salt to taste
Instructions:
- Prepare Rice: Wash and soak basmati rice for 30 minutes. Cook the rice in a pot or rice cooker until 70% done. Set aside.
- Cook Vegetables: Heat oil in a pan. Add cumin seeds, then onions. Sauté until golden.
- Add Aromatics: Add ginger-garlic paste and green chili, cook for a minute.
- Tomatoes and Spices: Add tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until tomatoes are soft.
- Add Vegetables: Add chopped vegetables and cook until tender.
- Layer Biryani: In a large pot, layer half of the partially cooked rice, followed by the vegetable mixture, then the remaining rice. Sprinkle garam masala and garnish with cilantro and mint leaves.
- Cook: Cover and cook on low heat for 15-20 minutes to allow flavors to meld.
- Serve: Serve hot with raita or salad.
