Vegetable Biryani

Ingredients:

  • 1 cup basmati rice
  • 1 cup mixed vegetables (carrots, beans, peas, potatoes), chopped
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1 green chili, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • 2 tbsp oil
  • Fresh cilantro and mint leaves for garnish
  • Salt to taste

Instructions:

  1. Prepare Rice: Wash and soak basmati rice for 30 minutes. Cook the rice in a pot or rice cooker until 70% done. Set aside.
  2. Cook Vegetables: Heat oil in a pan. Add cumin seeds, then onions. Sauté until golden.
  3. Add Aromatics: Add ginger-garlic paste and green chili, cook for a minute.
  4. Tomatoes and Spices: Add tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until tomatoes are soft.
  5. Add Vegetables: Add chopped vegetables and cook until tender.
  6. Layer Biryani: In a large pot, layer half of the partially cooked rice, followed by the vegetable mixture, then the remaining rice. Sprinkle garam masala and garnish with cilantro and mint leaves.
  7. Cook: Cover and cook on low heat for 15-20 minutes to allow flavors to meld.
  8. Serve: Serve hot with raita or salad.
